Each unit operates using the principle of gravity-based phase separation. As wastewater enters the separator, flow velocity is reduced, allowing heavier solids such as food particles to settle into the integrated sludge trap.
At the same time, fats and oils rise to the surface and are retained within the grease collection zone. The treated wastewater then flows onward to the sewer once contaminants have been removed.
